Ginger Slice [Vegan, Gluten Free, Refined Sugar Free]

This ginger slice is sweetened with stevia and dates. It’s gluten free and vegan. The crispy base pairs perfectly with the sticky topping. This slice was a hit with my family – I hope you will love it too!

Ginger Slice [Vegan, Gluten Free, Refined Sugar Free]

This healthy ginger slice is gluten free, vegan, and refined sugar free. A crisp and crunchy base topped with a sweetly spiced topping.

Serves: 15 pieces approx
Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

Ingredients
  

  • 1 cup brown rice flour
  • 1 1/2 tsp ground ginger
  • 2 tsp stevia granules
  • 1/3 cup coconut butter, melted
  • 1/2 cup water

For the topping:

  • 1 cup dates
  • 2 tsp ground ginger
  • 1/3 cup coconut butter, melted

Instructions
 

  • Preheat the oven to 180C/350F.
  • In a bowl, combine all ingredients for the base except coconut butter and water.
  • Stir through the water and coconut butter.
  • Line a small tray (I used 8 inches X 4 inches) with baking paper.
  • Press the base mixture into the tray.
  • Bake for 30 mins.
  • Meanwhile, make the topping by blending all the topping ingredients in a high speed blender until a sticky dough forms.
  • When the base has cooled, spread on the topping.
