Ginger Slice [Vegan, Gluten Free, Refined Sugar Free]
This healthy ginger slice is gluten free, vegan, and refined sugar free. A crisp and crunchy base topped with a sweetly spiced topping.

brown rice flour

For the topping:

cup
dates

ground ginger

coconut butter, melted
Instructions
Preheat the oven to 180C/350F.
In a bowl, combine all ingredients for the base except coconut butter and water.
Stir through the water and coconut butter.
Line a small tray (I used 8 inches X 4 inches) with baking paper.
Press the base mixture into the tray.
Bake for 30 mins.
Meanwhile, make the topping by blending all the topping ingredients in a high speed blender until a sticky dough forms.
When the base has cooled, spread on the topping.
