Ginger Slice [Vegan, Gluten Free, Refined Sugar Free]
This healthy ginger slice is gluten free, vegan, and refined sugar free. A crisp and crunchy base topped with a sweetly spiced topping. Recipe type: Dessert Serves: 15 pieces approx

Ingredients
- 1 cup brown rice flour
- 1 1/2 tsp ground ginger
- 2 tsp stevia granules
- 1/3 cup coconut butter, melted
- 1/2 cup water
For the topping:
- 1 cup dates
- 2 tsp ground ginger
- 1/3 cup coconut butter, melted
Instructions
- Preheat the oven to 180C/350F.
- In a bowl, combine all ingredients for the base except coconut butter and water.
- Stir through the water and coconut butter.
- Line a small tray (I used 8 inches X 4 inches) with baking paper.
- Press the base mixture into the tray.
- Bake for 30 mins.
- Meanwhile, make the topping by blending all the topping ingredients in a high speed blender until a sticky dough forms.
- When the base has cooled, spread on the topping.
