Five 3-Ingredient Peanut Butter Snacks

Peanut butter, the food of my childhood, how I love you so.   I thought peanut butter deserved it’s own post, one that is simple and uncomplicated, just like my love of peanut butter;  healthy  peanut butter snacks with 3 ingredients or less.

Also, I have to admit I`ve had this song in my head the entire time I`ve been preparing this post: “Peanut, Peanut Butter and Jelly!”

1.  Peanut Butter & Avocado Sandwich (The “Healthy Fat Sandwich”) 

Ingredients: Peanut Butter – Avocado – Fresh Bread

I know this sounds like a weird combination but it is surprisingly satisfying!  The peanut and avocado flavours are an unlikely but amazing couple (opposites attract?) .  I’ve had this for breakfast a few times over the past week and it`s both filling and decadent.

2. Daikon Radish Dipped in Peanut Butter

Ingredients:  Daikon Radish – Peanut Butter (yes I know this is technically only 2 ingredients…)

Daikon radish is a cruciferous japaense root vegetable that is high in vitamin C and is said to be anti-inflammatory and full of antioxidants.  Chopped up and dipped in peanut butter is my favourite way to enjoy it raw and it`s a good way to change up the traditional celery and peanut butter combo.

3. Easy Peanut-Lime Kale Salad:  

Ingredients: Peanut Butter – Fresh Squeezed Lime Juice – Finely Chopped Kale

 Yes, that’s right the dressing for this salad only has 2 ingredients; Peanut Butter & Lime Juice!   Combine 1 tbsp of peanut butter with 3 tbsp of freshly squeezed lime juice and blend until smooth (we use the magic bullet).  Pour over finely chopped kale, mix well and you have a thai-inspired kale salad in under 5 minutes.

4. “Ants on a Log” Celery Snacks

Ingredients: Celery – Peanut Butter – Raisins

This was one of my favourite childhood snacks.  I swear I can remember having this at the half-time between Mr. Dress-up and Sesame Street; pure bliss.  Celery and peanut-butter are a classic pairing and this is a cute way to prepare it for kids (or nostalgic adults like myself)

5. Peanut Butter & Banana Blender Ice Cream  (I saved the best for last!) 

Ingredients:  Frozen Banana – Peanut Butter – Almond Milk

Combine the below in a blender and blend until ice-creamy:  2 frozen bananas, 1 tbsp peanut butter and a few spashes of almond milk (try 2 teaspoons).

If you have not tried banana softserve before, you NEED to make this.   I tried this ice cream recipe for the first time this weekend and it was ah-mazing.  I`ve read about vegan banana softserve before, but I don`t think I actually beleived that frozen bananas blended together would create ice cream. Believe me it works; you may never crave real ice cream again, plus it’s actually good for you!
