I know it’s summer and this is totally not a summer post, but it’s a recipe that can be made with next to no fresh ingredients! Which, yes…I’m aware vegan food blogs are supposed to revel in the wonder that is summer produce. But lately I’ve been finding my busy schedule getting the best of me. I seem to have lost the ability to get myself to a grocery store the past few weeks. So …autumn in summer? It’s a thing, I’m making it happen. Apple Cinnamon now equals summer vacation.
Speaking of vacation, I’ve also been wanting to get a post together about our trip to Iceland, but we are drowning in the thousands of photos we took! It will happen though, so stayed tuned. I find it’s always hard to get back into the swing of things when you get back from vacation.
Anyway, I could go on about the health benefits of oatmeal and apples… but really all you need to know is that it’s easy to make and will make your kitchen smell divine while it’s baking. Total comfort food.
Apple Cinnamon Baked Oatmeal
Ingredients
- 1/2 cup rolled oats
- 1/2 cup finely diced golden delicious apple
- 1/2 cup soy milk
- 1/4 cup apple sauce
- 1 tbsp maple syrup
- 1 tbsp melted coconut oil
- 1/2 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/8 tsp nutmeg
Instructions
- Combine ingredients, mix well and pour into single serving ramekin. Bake at 380 for 30min.
