Smoky Harvest Apple Chips

This recipe combines sweet and savoury flavors; making it the perfect autumn snack food. The best part is that no dehydrator is necessary! This recipe just requires a bit of time and a regular oven. You simply chop up the apples, season with smoked paprika, salt and pepper and pop in the oven. Then it’s just waiting for your kitchen fill up with an amazing harvest aroma. I made a batch last week while while it was cold out and I was hunkered down watching Criminal Minds & Law Order (the perfect Wednesday night) and I can tell you eating the apple chips as a late night snack was heavenly.

The key is slicing the apple into slices that all have the same thickness.  I’d recommend using a mandolin if you have one (a lot of spiralizers come with a slicing attachment) to get the slices nice and thin.  If you end up with thicker slices you’ll just need to bake for a bit longer (just be sure to keep an eye on them).  From experience of previously overcooking a batch of these, I promise the cooking time included in the recipe is accurate. They will almost seem like you want to keep cooking them but because they will seem a tiny bit soft in the middle but after a few minutes out of the oven they will crisp right up.

After Mr. Pea tried these he swore up and down they beat any of the store-bought varieties.  The little bit of smokiness and spice makes it hard to stop with just one chip – which in this case isn’t a bad thing! The saying is an apple a day right?

Smoky Harvest Apple Chips

Prep Time 5 minutes
Cook Time 2 hours 15 minutes
Total Time 2 hours 20 minutes
Servings 1 large bowl of chips

Ingredients
  

  • 2 granny smith apples
  • 3 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/4 tsp sea salt or Herbemare

Instructions
 

  • Preheat oven to 225 and line 2 baking sheets with parchment paper.
  • Combine apple cider vinegar, smoked paprika, salt and pepper in a small bowl.
  • Using a mandolin or sharp knife cut apples into thin slices. The thickness of the slices should be as consistent as possible (and as thin as you can get them).
  • Lightly brush both sides of each apple slice with the smoked paprika mixture and place on baking sheets.
  • Bake for 1 1/2 hours (until slices are starting to crisp up). Flip over and bake for an additional 40-45 minutes. It will be tempting to keep baking longer because the chips will still feel a little soft while hot, but the chips crisp up once out of the oven for a bit.
  • Let chips cool for a few minutes and then enjoy!

Notes

If you are using a knife and end up with thicker apple slices bake for an extra 10-15 min.
