I had great plans of multiple blog posts this week, but one thing led to another and here we are on Sunday afternoon writing my first post since last weekend! I realize now that I totally took for granted the number of posts my favourite food bloggers make each week and month on a consistent basis; I had no idea the labour of love it is and how much effort it takes especially when you are also working full-time. That being said I’m excited for the week ahead and the recipes we have planned for the holiday season.
In addition, to having a new appreciation for food blogs, I also have a new appreciation for everything my parents did to make the Christmas season special for my sister and I. I went home for the weekend to visit my parents and revived my childhood tradition of making gingerbread houses from scratch with my sister (vegan gingerbread house extravaganza post coming soon!). I can now tell you that making a gingerbread house from scratch is way more involved than anticipated. But it was incredibly fun and I can’t wait to share the final results on the blog. After the sugar rush that was Saturday’s gingerbread house production, my mom and I put together this refreshing salad for a late Sunday lunch, served with fresh bread. Pears, walnuts and red onion are combined with fresh greens and an apple vinaigrette, making it the perfect holiday appetizer. It’s a simple but elegant addition to the table and is also a super-easy recipe.
Pear & Walnut Salad with Apple Vinaigrette
Ingredients
for salad
- 4 cups of mixed greens
- 4 small pears, sliced
- 1/2 red onion, thinly sliced
- handful of walnuts
for the vinaigrette
- 3 tbsp apple juice
- 1 tbsp rice vinegar
- 2 tsp olive oil
- pinch fresh ground pepper
Instructions
- Whisk vinaigrette ingredients in a small bowl and set aside.
- Arrange salad greens on plates, add pears, red onion and walnuts.
- Drizzle with vinaigrette and serve.
