Welcome to January; freezing cold weather, fresh starts, packed gyms…and even more freezing cold weather! Although it was a bit of a shock to the system going back to work after two weeks I can honestly say I’m excited for 2015. I just have a feeling it’s going to be a good year; time to turn up the beet! (ha…sorry couldn’t resist).
I’ve been devouring this nutrient-packed vibrant smoothie for the past few weeks so excited its the first recipe of the new year. With beets, mango, strawberry and blueberries it’s packed with antioxidants and vitamins. Beets are known to lower blood pressure and have anti-inflammatory properties in addition to a great source of folic acid, fibre, manganese.
To be honest history of beet consumption has been less than sub-par. However I’ve recently discovered that I actually quite like them! Plus I’ve been buying those pre-cooked beets they sell at Costco (the Love Beets brand) and I’m a bit obsessed. Beets in the morning are a nice change from our regular green smoothies. One of my resolutions for 2015 is to experiment more with smoothies. Yes, I know a bit of a frivolous resolution but I’m one of those people who when I find something I like I make it over and over again – so this year I’m going to try to mix it up more. Perhaps I’ll try to post a new smoothie each month?
‘Turn Up the Beet’ Antioxidant Smoothie
Ingredients
- 2 small-medium beets, cooked
- 1 cup frozen mango, chopped
- 1 cup frozen whole strawberries
- 1/2 cup fresh blueberries
- 2 cups water
- 1/2 tsp lemon juice
Instructions
- Combine ingredients in blender and blend until smooth. We recommend using a high-powered blender such as the Blendtec or Vitamix. Enjoy!
