Just popping in quickly to say Hi! Even though I just posted last week it feels like a lifetime ago. I’ve been immersed in vacation-planning the last few days and feel like I haven’t had time for anything else. We are planning to go to Iceland in May which I’m super excited about! It’s going to be a mix of relaxation (geo-thermal pools and hotsprings) and active days (glacier hiking anyone?). We are planning to rent a car and do a bit of a roadtrip so I’m trying to plan where to stay each night and have a rough outline of what to do each day. Ok…let’s be honest..by a “rough outline” I mean I have an intense planning spreadsheet in the works. So if I’m a bit MIA it’s probably because I’m dreaming of being here!
Anyway, I though I’d share a green smoothie recipe I made today after work. It’s banana-free and packed kale, strawberries and kiwi. A little bit of extra chia gives it the thick creamy texture that you usually get from the banana. We usually do a banana/kale/peanut butter and cinnamon smoothie inspired by the classic recipe in the Oh She Glows cookbook, but sometimes I feel like we are going through bananas at an out of control pace so I like to change it up once and awhile. Plus it is finally getting a bit warm outside and there’s bright natural light in our condo after work; so I feel like summer-time strawberries and kiwis are appropriate. Here’s to Spring; it’s finally almost here!!!
Strawberry Kiwi Kale Smoothie
Ingredients
- 1 cup kale
- 5-6 frozen strawberries
- 2 peeled kiwi fruits
- 2 tbsp chia seeds
- 1 cup non-dairy milk
- 1/3 cup cold water
- 5-6 ice cubes
- 1/2 tsp agave
- 1 scoop protein powder (optional)
Instructions
- Combine ingredients in a high-powered blender (we use the Blendtec) and blend until smooth.
