  • 1 batch Vegan Chicken (Homemade)

For Egg Coating

  • 4 tablespoons Gram Flour
  • Plant Milk 200 ml
  • 1 teaspoon Cider Vinegar
  • ½ teaspoon Sriracha

For Spiced Flour

  • Plain White Flour 300 gm
  • 3 tablespoons Corn Flour
  • 2 teaspoons Fine Sea Salt
  • 2 teaspoons Old Bay Seasoning
  • ½ teaspoons Ground Black Pepper

For Frying

  • Vegetable Oil As needed

To Prepare The Vegan Chicken

  • Begin by pulling apart the batch of vegan chicken (store-bought or homemade) into strips, wings, or tenders. If you're using oyster mushrooms, tear them into wing-sized pieces or leave in chunky clusters for a varied texture. Set aside in a bowl.

To Fry The Chicken

  • Prepare the Egg Mixture: In a medium bowl, whisk together 4 tablespoons of gram flour, 200 ml of plant milk, 1 teaspoon of cider vinegar, and ½ teaspoon of sriracha. This mixture will act as your vegan "egg" coating.
  • Prepare the Spiced Flour Mixture: In another medium bowl, combine 300 g of plain white flour, 3 tablespoons of corn flour, 2 teaspoons of fine sea salt, 2 teaspoons of Old Bay seasoning, and ½ teaspoon of ground black pepper. Mix well.
  • Coat the Vegan Chicken: Using a dedicated hand for each mixture to avoid clumping, coat each piece of vegan chicken first in the spiced flour mixture, then dunk into the egg mixture, and coat again in the flour. This double coating ensures a crispy exterior
  • Fry the Chicken: Carefully place the coated vegan chicken in the hot oil and fry for 2-4 minutes or until golden brown and crispy. Use a spider or slotted spoon to remove the chicken from the oil and let it drain on the kitchen towel. Repeat with the remaining pieces.
  • Serve: Enjoy your vegan fried chicken hot, perfect as a main dish or a snack.

Notes

  • For an authentic taste, marinate plant-based protein (tofu, seitan, or jackfruit) in a blend of poultry-inspired seasonings.
