Banana Choc Chip Cookies
Easy vegan cookies with just a handful of ingredients. Can be easily made gluten-free also.

oats / 1.5 cups oat flour
/ 1.5 cups oat flour

bicarb soda

large overripe bananas
/ 1 cup banana purée

smooth peanut butter (or another nut butter)

vegan choc chips
Instructions
Preheat oven to 180C/350F.
Blend the oats in a high speed blender (I use my Froothie Optimum 9400) to make a flour, or use the amount listed for premade oat flour.
Mix the oat flour with the bicarb.
Purée the bananas.
Add bananas and nut butter to oat flour and mix well.
Stir through choc chips.
Place tablespoon sized cookies into a baking sheet (if dough is sticky, leave to rest for 15 minutes).
Bake for 15-18 minutes at 180C/350F.
Let cool completely before storing in an airtight container.
