In a highspeed blender, blend the ingredients for the pink nicecream on the high speed until smooth and creamy. You may add a splash of liquid if needed (coconut milk makes a creamy addition).
Scoop the pink nicecream into a bowl and place in the freezer while you repeat the process for the purple and green layers.
Remove from the freezer and layer the nicecream into serving dishes.
Top with extra fruit and serve immediately.
