Banana Choc Chip Cookies

Easy vegan cookies with just a handful of ingredients. Can be easily made gluten-free also.
Serves: 16 cookies

  • 2 cups oats / 1.5 cups oat flour / 1.5 cups oat flour
  • 1/2 tsp bicarb soda
  • 2 large overripe bananas / 1 cup banana purée
  • 4 tbs smooth peanut butter (or another nut butter)
  • 2 tbs vegan choc chips


  • Preheat oven to 180C/350F.
  • Blend the oats in a high speed blender (I use my Froothie Optimum 9400) to make a flour, or use the amount listed for premade oat flour.
  • Mix the oat flour with the bicarb.
  • Purée the bananas.
  • Add bananas and nut butter to oat flour and mix well.
  • Stir through choc chips.
  • Place tablespoon sized cookies into a baking sheet (if dough is sticky, leave to rest for 15 minutes).
  • Bake for 15-18 minutes at 180C/350F.
  • Let cool completely before storing in an airtight container.
