Make a dough by combining the flour, water and salt. If it's too dry, add a little more water, or if it's too sticky add a little more flour.
Divide the dough into 3 pieces and roll out thinly, until they have a diameter of around 20cm.
Prepare the vegetables for the pizzas - dice the mango, onion and capsicum.
Spread 2 tsp of sweet chilli sauce onto each of the pizza bases.
Put one base into a frying pan (sauce side up) and top with the spinach, olives, mango, onion, capsicum and vegan cheese, if using.
Put the frying pan over a low heat, cover, cook for about 7 minutes.
Remove the pizza from the pan and repeat the process for the next 2 pizzas.
Slice and serve immediately!
