Preheat oven to 225 and line 2 baking sheets with parchment paper.
Combine apple cider vinegar, smoked paprika, salt and pepper in a small bowl.
Using a mandolin or sharp knife cut apples into thin slices. The thickness of the slices should be as consistent as possible (and as thin as you can get them).
Lightly brush both sides of each apple slice with the smoked paprika mixture and place on baking sheets.
Bake for 1 1/2 hours (until slices are starting to crisp up). Flip over and bake for an additional 40-45 minutes. It will be tempting to keep baking longer because the chips will still feel a little soft while hot, but the chips crisp up once out of the oven for a bit.
Let chips cool for a few minutes and then enjoy!
Notes
If you are using a knife and end up with thicker apple slices bake for an extra 10-15 min.
