Pumpkin Pie Breakfast Quinoa

Ingredients
  

for the quinoa

  • 1/2 cup quinoa
  • 1 cup non-dairy milk
  • 1/2 cup water
  • pinch of salt
  • 3/4 cup pure pumpkin (not pumpkin pie filling!)
  • 2 tbsp maple syrup
  • 1 tsp blackstrap molasses
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg

for the toppings

  • chopped pecans
  • shredded coconut

Instructions
 

  • In a medium saucepan bring the quinoa, milk, water and salt to a boil.
  • Cover, turn down to low-medium and simmer for approx. 30 minutes or until soft and fluffy.
  • Once cooked, add pumpkin, spices, molasses and maple syrup and stir until well combined.
  • Top with chopped pecans and shredded coconut.
