Ingredients
for the quinoa

quinoa

cup
non-dairy milk

cup
water
pinch of salt
3/4
cup
pure pumpkin
(not pumpkin pie filling!)

tbsp
maple syrup

tsp
blackstrap molasses
1
tsp
cinnamon

tsp
ground ginger
1/4
tsp
ground nutmeg
for the toppings
chopped pecans
shredded coconut
Instructions
In a medium saucepan bring the quinoa, milk, water and salt to a boil.
Cover, turn down to low-medium and simmer for approx. 30 minutes or until soft and fluffy.
Once cooked, add pumpkin, spices, molasses and maple syrup and stir until well combined.
Top with chopped pecans and shredded coconut.
