Sugar Free Apple Pie

A sweet spiced apple pie. Vegan, sugar-free, wheat-free.
Ingredients
  • 4 organic red Fuji apples
  • ½ cup water
  • ½ cup brown rice malt syrup
  • ½ tsp cinnamon
  • 5 whole cloves
  • 1½ cups spelt flour
  • ½ cup coconut oil
  • 2 tbsp almond milk
  • 2 tsp rice malt syrup
Instructions
  1. Core and dice the apples.
  2. Add to a medium sized saucepan along with water, syrup, cinnamon and cloves.
  3. Bring to a boil over medium heat and simmer for 25 minutes, covered. Stir occasionally.
  4. Preheat the oven to 180 degrees Celsius / 350 degrees Fahrenheit.
  5. Meanwhile make the pastry by combining the remaining ingredients (flour, oil, milk & syrup).
  6. Separate one third of the dough to set aside.
  7. Roll the remaining dough to line a prepared medium-sized pie dish.
  8. Fill the dish with the cooked apples.
  9. Roll the remaining dough and cut into strips.
  10. Arrange dough strips in a lattice pattern across the top of the apples.
  11. Decorate with dough trimmings if you have any leftover.
  12. Bake for 40 minutes.
