Carrot Cake Porridge

A delicious porridge to start your day with. All the flavour of carrot cake but totally guilt-free! Sugar-free, dairy-free, wheat-free.
Ingredients
  • 1 cup rolled oats
  • 1 cup water
  • 1 cup rice milk
  • ½ cup grated carrot
  • 6 dried dates, chopped
  • 2 tbs walnuts, chopped
  • ¼ tsp turmeric
  • ½ tsp ginger
  • 1 tsp cinnamon
Instructions
  1. Combine all ingredients in a small saucepan.
  2. Heat over a low heat.
  3. Simmer for 10 minutes or until oats are cooked through, stirring frequently.
  4. Serve immediately.
Notes
You could substitute the cup of rice milk for another cup of water or plant-milk of your choice. Prunes would make a good substitute for the dates if you have none.
