Matcha Vegan Donuts

Serves: 10 donuts
Vegan donuts infused with matcha, and drizzled with chocolate. Gluten free, refined sugar free.
  • 1 cup buckwheat flour
  • 2 tbs matcha powder
  • 1 tsp bicarb soda
  • ¼ cup stevia (or other sweetener, to taste)
  • ½ cup mashed banana
  • 1½ tbs coconut oil, melted, plus extra for greasing pan
  • ½ cup water
Chocolate drizzle
  • 1 tbs stevia
  • 3 tbs cacao powder
  • 2 tbs coconut oil, melted
To serve
  • Extra matcha powder to sprinkle on top
  1. Preheat the oven to 180C/350F.
  2. In a large bowl, combine the dry ingredients (buckwheat flour, matcha, bicarb and stevia).
  3. In a separate dish, combine the banana, coconut oil and water (ensure all ingredients are room temperature to prevent the coconut oil solidifying).
  4. Mix the wet ingredients in with the dry until well combined.
  5. Grease a donut pan with coconut oil.
  6. Spoon the batter into the donut pan, smoothing the tops of each donut with your finger.
  7. Bake for 15 minutes.
  8. Remove tray from oven and bang gently against the counter to remove the donuts from the tray.
  9. Let the donuts cool before drizzling with chocolate.
Homemade chocolate drizzle
  1. Combine all the drizzle ingredients in a small bowl, then drizzle over the cooled donuts before serving.
  2. Sprinkle with extra matcha powder if desired.
Instead of making a homemade chocolate drizzle, you could melt some vegan dark chocolate to drizzle onto the donuts instead.
