Sweet Potato Lentil Flour Pizza Crust

Serves: 1 pizza
A healthy pizza crust full of sweet potato and red lentil flour. Vegan, gluten free, oil free.
  • 1 cup red lentil flour (tip: make your own by blending approx 1½ cups dry red lentils into a flour)
  • ½ tsp bicarb soda
  • 1½ cups cooked sweet potato
  1. Preheat oven to 180C/350F.
  2. Mix the lentil flour and bicarb soda.
  3. Mash in the sweet potato and combine well.
  4. Line a baking tray with baking paper.
  5. Press the mixture onto the paper (it will be a bit wet and sticky) into the size of a pizza base.
  6. Bake for about 20-25 minutes.
  7. Top with your desired toppings!
