Raw-ish ANZAC Biscuits

These mostly raw ANZAC biscuits taste just like traditional ANZAC biscuit dough - only much healthier! Vegan, refined sugar free, can be gluten free.
  • 1 cup shredded coconut
  • ¾ cup cashews
  • ½ cup dates
  • ½ cup rolled oats (use certified gluten-free oats if needed)
  1. Blend coconut and cashews until fine.
  2. Add dates and blend until well combined.
  3. Transfer to a bowl and mix in oats.
  4. Shape into cookies and eat!
  5. Tip: if mixture is too dry you can add a splash of water to help cookies stick together.
