Spinach Salad With Orange & Avocado

The perfect combination of textures and flavours. Spinach salad with orange, avocado, red onion and walnut pieces.
  • 2-3 cups baby spinach leaves
  • ½ red onion
  • 1 avocado
  • 1 orange
  • ¼ cup walnuts
  • 2 tsp apple cider vinegar
  • 2 tsp extra virgin olive oil
  • Pinch of salt
  1. Wash the spinach leaves and chop roughly.
  2. Thinly slice the onion.
  3. Slice the avocado.
  4. Chop the orange into eighths and peel off the rind.
  5. Chop the walnuts.
  6. Combine the prepared ingredients in a salad bowl.
  7. In a small jar, combine the vinegar, olive oil and salt by shaking vigorously.
  8. Pour the dressing over the salad and serve immediately, or keep in the fridge for up to 24 hours.
