Strawberry Cheesecake

These strawberry cheesecakes are so easy to make, and use only 5 ingredients! Healthy, full of fruit, delicious. No bake, vegan.
  • 1½ cups roasted almonds
  • ½ cup medjool dates, pitted
  • 250g strawberries
  • 3 bananas
  • 3 tbs coconut oil, melted
  • Optional toppings: edible flowers, fresh strawberries, chocolate drizzle
  1. Blend the almonds and dates together in a high speed blender until the mixture comes together like a dough.
  2. Press into a silicone (or lined) tray/muffin tray.
  3. Blend the strawberries, bananas and coconut oil until smooth and creamy.
  4. Pour over the base in the tray.
  5. Freeze for 3 hours or until solid.
  6. Top with desired toppings and serve.
You can freeze overnight, or for up to 6 months, just leave the cakes out to defrost for 15-30 minutes before serving.
You can make a chocolate drizzle by combining equal parts of cacao powder, coconut oil and rice malt syrup.
