Pear & Chai Spelt Muffins

These chai-spiced muffins are sweet but sugar-free! Seriously healthy enough for breakfast (and snacks throughout the day too).
  • ½ tsp ground cloves
  • 1 tsp ground ginger
  • ½ tsp ground cardamon
  • ½ tsp allspice
  • 1 tsp cinnamon
  • ½ tbs baking powder
  • ¼ cup Natvia stevia granules
  • 2 cups wholemeal spelt flour
  • 1 tsp vanilla essence
  • 1 cup pear puree
  • ¾ cup rice milk
  • ¼ cup coconut oil
  • 1 pear
  1. Preheat the oven to 180 degrees Celsius / 350 degrees Fahrenheit.
  2. Combine dry ingredients in a large bowl (spices, baking powder, stevia & spelt flour).
  3. Combine wet ingredients in a smaller bowl (vanilla, pear puree, rice milk and coconut oil).
  4. Pour the wet ingredients into the dry ingredients and combine well.
  5. Scoop the batter into prepared muffin trays.
  6. Cut thin slices of the pear and place a slice on top of each muffin.
  7. Bake for 30 minutes.
  8. Let cool then serve.
  9. Store in an air-tight container.
Pear puree: make your own by blending a pear or two to get 1 cup. Alternatively, use pear pulp leftover from juicing. You could also grate pears to get 1 cup, or chop pears and cook with a little water on the stove until stewed (like applesauce). Leave the skin on for added fibre!
