Hey guys! Here’s this week’s vegan meal plan :) I always have so much fun putting together these meal plans from meals that I find on Pinterest or from blogs that I visit during the week. Something that I try to do when meal planning is put together meals with similar components, so I can cook in bulk one night for an easy dinner later in the week. You’ll see I’ve accomplished this goal this week ;)
Vegan meal plan
If you haven’t been following along with my meal plans, here’s how it works – I like to plan just a few breakfasts & lunches (because most of the time we have our own quick solutions for these day time meals). For dinners, I like to leave a few nights free of planned meals to leave room for spontaneous meals, eating out, or just lazy dinners like baked beans on toast ;)
I usually reserve pancakes for special occasions these days, and I’ve picked these whole-grain beetroot & cardamon pancakes by Cara Schrock to have for my birthday breakfast on Monday :D
I love a good savoury breakfast, particularly during the colder months, and this Polenta scramble by The Breakfast Drama Queen is calling my name…
We’ll be having baked sweet potatoes for dinner one night (see below ;) ) so I’ll bake extra to make these roasted sweet potato & bean quesadillas by The Pretty Bee – oh I love quesadillas!
I recently had onigiri for the first time and now I’m hooked! I love the creative onigiri in this post: Vegan onigiri by Lands & Flavours – I’m going to make a few of these different flavours over the week.
For birthday dinners in our household, the birthday person gets to choose whatever they want for dinner. Usually everyone choose nachos or pizza :D this year for my birthday, I’ve chosen this amazing deep dish quiche pizza by Rainbow Nourishments.
Soups are always on the menu during winter at my house, but I like to change it up each week. This week I’m making this cold-kicking miso soup by Cadry’s Kitchen to warm us up.
Seeing as I’m going to make some polenta for the polenta scramble for breakfast, I thought I should also make a polenta based dinner! I decided on these grilled polenta cakes with ratatouille by Little Vegan Bear.
Mexican food is always a pleaser at my house, so this week we’ll get our Mexican fix with these Mexican baked sweet potatoes by The Whole Ingredient.
Burgers are often a fun meal here – usually for lunch, but they also make a fast dinner (if I’m prepared!). This week I’m making these tempeh burgers :)
