I’m a sucker for themes, and with Cinco De Mayo this week I thought it would be fun to make a Mexican themed menu plan. I love Mexican food, and I could eat it everyday – so this week, I will! I hope you guys love Mexican as much as I do!
To make meals easier this week, I’m going to cook up a big batch of salsa this weekend which will be used throughout the week in many of these meals. You can always buy jars of salsa but I prefer making my own :)

Another easy lunch will be tostizzas by Rock My Vegan Socks! I used to make tortilla pizzas a lot for quick lunches, and I love Kimmy’s Mexican version.
I’ve actually never had soft tacos, but there’s a first time for everything! I can’t wait to try this lentil and cauliflower rice taco filling by FatFree Vegan Kitchen.
I don’t often make baked burritos, because when I make burritos they never make it to the oven – we just eat them straight away! But I really like the look of these white bean and avocado baked burritos by Ceara’s Kitchen, they look so crispy <3
These pumpkin, apple and caramelized onion quesadillas by Veggie Inspired are very seasonally appropriate for Australia at the moment, I can’t wait to try this autumnal twist on quesadillas!
I love nachos – I think my all-time favourite food is a tie between nachos and pizza – so if I’m having a Mexican week I need to have nachos too! Here’s my recipe for nachos with 3-bean chilli.
Of course I had to include a pizza on my meal plan too, so how does this mexican pizza by Connoisserus Veg look? I love that black bean spread on the base, it looks so yummy!
