I’m back with another vegan meal plan! I’m really enjoying putting together these weekly posts, and I hope you are enjoying reading them too.
First up is this Chickpea Apple & Pepper Scramble by Bite Sized Thoughts! I’ve been meaning to try a chickpea scramble and I really like the sound of the combination of flavours in this scramble.
For a sweet breakfast option, I can’t wait to try these Breakfast Doughnuts by Marfig’s Munchies! Although admittedly, I don’t have a doughnut pan yet, so I’m going to try them as muffins, but I’m sure they will taste the same :D
My 3 year old son particularly loves avocado, and we all love Mexican food, so I am sure these Corn & Black Bean Stuffed Grilled Avocados by Nutritioulicious are going to be a winning lunch this week!
I’m also going to make some more sushi – after posting this Wild Herb & Quinoa Sushi recipe last week, I’ve really been in the mood for more sushi for lunch!
This barbecue potato salad by The Vegan 8 looks like a big bowl of comfort food <3 and I really like how Brandi includes an easy recipe for homemade BBQ sauce!
I love the hidden vegetable in this healthy carbonara by Win-Win Food <3
I bought a whole pumpkin so I used the Food Monster app to search for recipes using pumpkin, and I came across this awesome sweet and spicy pumpkin chili by Real Raw Kitchen. It looks so good, especially with the cashew sour cream on top!
Still looking for more ways to use pumpkin, I fell in love with this red lentil pumpkin dal by Connoisseurus Veg! We’ve been eating dal A LOT lately…I used to think it was boring, but lately I’ve discovered it’s actually a delicious and easy meal. This version looks really yummy!
Lastly, I’ve finally got pizzaritos (pizza burritos ;) ) by Veggies Don’t Bite on my meal plan for the week! I actually spotted this recipe when it was first published in March, but haven’t got around to making it yet. I cannot wait for these pizzaritos!
