Wow, you guys! Thank you so much for the support with the vegan meal plan I posted last week – I’m so glad to see that I inspired so many of you to plan some healthy, vegetable-filled meals this week! So I’m back with more – here’s what I’m planning to make for the next week:
Note: as I mentioned last week, I don’t always plan breakfasts and lunches each week, and I usually only plan about 5 dinners so I have a bit of room for flexibility.
We have been eating a wide variety porridges here, and these Golden Apple Turmeric Oats by Two City Vegans look like something my whole family will enjoy!
I’ve been meaning to try the Creamy Cauliflower Breakfast Bowl by Unconventional Baker for some time now, so it’s finally made it’s way onto my menu for this week. Really looking forward to this one!
I like to have green smoothies for breakfast to get a good serve of veggies in the morning, and I love the amount of veggies Tiina from My Berry Forest has packed into this Super Green Smoothie!
This deconstructed sushi bowl by Lazy Cat Kitchen looks sooo good! My kids love sushi too, so I think they will enjoy a simplified version of this bowl too (probably without the cucumbers and radishes – but more for me :D ).
This Lentil & Chickpea “Egg” Sandwich Filling by I Love Vegan looks sooo yummy. Be sure to add that black salt for the “eggy” taste!
I tried making sweet potato noodles a few weeks ago but didn’t follow a recipe, just kinda winged it, and they turned out a bit mushy. So I’m really looking forward to following this recipe for sweet potato noodles with a coconut curry by Food Faith & Fitness.
I’m looking forward to making my Mexican Pizza again, it’s everything I love about Mexican food, on a pizza :D
Still being in the mood for Mexican (I’m always in the mood for Mexican, actually), next I’m going to make this One Pan Mexican Quinoa from Crazy Vegan Kitchen. I’m definitely up for meals that only need one pot or pan = less washing up, yay!
I often make roast vegetables for dinner, sometimes with a protein source (lentil loaf, hummus, vegan sausages, etc) but sometimes without. This week I’m going to serve up these Oil Free Rainbow Roast Veggies by Simple Vegan Blog, along with some hummus.
My husband claims he loves the taste of mushrooms but not the texture, so I’m going to make this Creamy Mushroom Soup by Pancake Warriors, but I’ll puree it :)
