So, way back when I started my blog, I was right into meal planning, and I would share on here my meal plan each week. I’m actually a bit embarrassed about those earlier posts (can you say, hello bad photography?!) but if you’re really curious, you can go digging in the archives ;)
Meal planning is still a big part of my life though. I always come up with 5-7 meals to make for dinner each week, plus some ideas for breakfast & lunch. Once I have a rough idea of what I’m going to make, I can then write out my shopping list. That way, I don’t end up buying random vegetables that end up rotting in the bottom of my fridge! It also eliminates the need to go grocery shopping more than once a week – living out of town, plus having 3 young children, means that spontaneous visits to the grocery store are often painful.
But anyway. I thought this would be a fun post to share what I plan on feeding myself and my family next week. I’m hoping it will give you some ideas if you are struggling to plan your meals for the next week. I probably won’t do this type of meal planning post every week, but if you guys like this style of post, please let me know and I’ll make it a regular thing!
So, here’s my meal plan for the next week:
Peanut Butter Chocolate Overnight Oats by VNutrition – is there anything better than PB & chocolate for breakfast? <3
Chocolate Rosemary Granola by Love Me Feed Me – I’m really looking forward to trying this combination of chocolate and rosemary! It might seem weird but I’m convinced this is going to taste amazing :D
I’m still in the recipe-testing mode for my new ebook “Hide And Seek Vegetables” so I’m going to be testing a few breakfast recipes from there too, but I can’t reveal too much more yet ;)
Lunch usually seems to be leftover dinner, and sometimes leftover breakfast (I did actually have beetroot cake porridge for lunch one day last week).
On days when I have no leftovers, I often make salad sandwiches or salad burgers. Admittedly, the children’s version of a salad sandwich usually consists of only tomato slices, sometimes some herbs (basil, parsley) and cucumber. My salad sandwiches are usually stuffed with an assortment of herbs (always some brahmi), tomato, cooked pumpkin, baby spinach, and whatever else is waiting in the fridge or the garden.
Vegan Fish Burgers by Elephantastic Vegan – these look like a great family friendly meal, and I know my kids will eat these burgers!
I can’t wait to try this Very Green Pizza by The Awesome Green! Pesto is a great way to get my kids to eat their greens :D
It’s the end of capsicum season here and I’ve been finding good deals on bags of capsicums lately, so this pasta pepperonata will be on the menu next week.
I’m also really liking the look of this pumpkin, spinach and walnut spaghetti by Lazy Cat Kitchen. I have some pumpkin that needs using, so this looks like what my pumpkin is destined for!
With the arrival of autumn, I’m starting to feel like warming soups, and this cream of broccoli soup by Win-Win Food sounds perfect!
