I can’t believe how fast time flies. We’re halfway through 2015 (it still feels weird when I write today’s date and end it with 2015…I feel like I should be writing 1998 instead…). And it’s been about a year since I began blogging seriously! Since July 2014, I have published 109 blog posts – go me :)
What I wrote a year ago: my (mis)adventures in growing vegetables during winter.
An update on my winter vegetable growing: I’m having much more success this year with gardening, however my greenhouse did not survive the summer storms! But I have a little garden patch that gets plenty of warm winter sun, where I’ve got some thriving rows of snow peas, leeks, garlic, spinach, silverbeet and kale. I just hope they all survive the cold snap we are getting this weekend (snow is forecast for areas 600m above sea level – this could mean we might see snow from our house! Snow is a very rare sight in Tamworth…our family is very excited!).
Anyway, on to today’s recipe. A few weeks back I shared this recipe for healthy blender muffins, topped with a creamy icing. However, I wasn’t ready to share the recipe for the icing as I didn’t really measure out the ingredients (I kind of just dumped everything into the blender and hoped for the best!). But, I’ve perfected this recipe, and it is soo good. Easy and tasty :)
Creamy, sticky, finger-licking deliciousness. With no refined-sugar! The cinnamon gives it the icing a comforting flavour which goes so well with chocolate or banana or apple muffins.
Or, if you run out of healthy muffins, it makes a great dip for apple slices! Spice up your chopped fruit – my kids LOVE this.
- 1½ cups cashews
- ½ cup water
- 1 tsp cinnamon
- 1 tbs rice malt syrup
- Place the cashews in a high-speed blender and blend until fine.
- Add the remaining ingredients and blend under smooth and creamy.
If you have leftover icing, it makes a delicious dip for fresh fruit!
