Everyone will tell you that breakfast is the most important meal of the day. But then mainstream cereal companies will advertise their sugar-laden cereals (albeit with added vitamins and minerals) as the “best start to your day”. I don’t know about you, but when I eat a commercial cereal for breakfast (even the healthier, alternative grain, sugar-free brands) my body feels under-nourished. I like to start my day off right, with some fresh vegetables and/or fruit!
And of course, breakfast should be quick to prepare – when I wake up, I like to eat soon afterwards, rather than having to cook for 30 minutes before I can finally eat.
Here are some of my favourite breakfast options:
Raw granola topped with fresh fruit
Scrambled tofu and vegetables (like leek, fresh herbs, or leftover vegetables from dinner)
Pancakes with chia seeds and mixed berries
And of course, there’s good old-fashioned toast! Loaded with vegetables of course ;)
Leftover mashed potato and fresh cilantro.
Curried tofu with mustard pickles and fresh parsley.
