It’s Monday again and you know what that means – it’s Meal Planning Monday!
Here’s what our menu looks like this week:
Adapted from Vegan For One by Leah Leneman
2 cloves of garlic
1/2 head of cauliflower
1 tbsp olive oil
Salt and pepper to taste
500ml vegetable stock
125ml rice milk (or your choice of vegan milk)
To serve: fresh ground black pepper, coriander, and some fresh scones or garlic bread
Finely chop the onion, garlic, peeled potatoes and cauliflower.
Heat the oil in a saucepan and add the vegetables.
Saute for about 5 minutes, until the vegetables are starting to brown.
Add the salt and pepper and stock.
Bring to the boil and cover, simmering gently until the vegetables are soft – about 15-20 minutes.
Turn off the heat and add the rice milk.
Allow to cool slightly.
Blend with a hand blender.
Serve with a generous amount of freshly ground black pepper and some fresh herbs, and some freshly baked garlic bread or savory scones.
