This week I am trying to keep our meals simple and easy to prepare, as I am expecting our 3rd baby to be born any day now. I have a stash of meals in the freezer to heat in the oven for after the birth of the baby, as I don’t think cooking dinner will quite make it to the top of my list of things to do in those first few days with a newborn! But if baby decides to come after the due date, here are the meals we are going to be eating this week:
Chilli cheese fries
Slow cooker lasagna
Bruschetta with olive tapenade
Sweet potato and lentil curry
Chilli cheese fries…what can I say. I’m pregnant and in need of comfort foods, and a big tray of home-baked greasy fries topped with salsa and vegan nacho cheese sure hits the spot!
Vegan Chilli Cheese Fries
Serves 2 adults + 2 kids
4 tbsp olive oil
1 jar of tomato salsa
Vegan nacho cheese sauce (recipe follows)
Preheat oven to 180 degrees Celsius.
Peel and chop the potatoes into fries about 1 cm wide, by the length of the potato.
Coat with the olive oil and place onto baking trays.
Bake in the oven for 30 minutes or until fries are nicely golden brown.
Remove from oven, top with tomato salsa and vegan nacho cheese sauce.
Return to oven for a further 5 minutes.
Remove, and enjoy :)
Vegan Nacho Cheese Sauce
Makes about 3/4 cup
1/2 cup macadamia nuts
1/2 cup water
1 tsp paprika
Salt and pepper to taste
1 tsp apple cider vinegar
1 clove of garlic
Blend all ingredients together until creamy.
Serve over chilli cheese fries, nachoes, in quesadillas, or any other Mexican dish.
